Town Appeal welcomes the Mine Hill Distillery to Roxbury, CT!  Owner Elliott Davis, a venture capitalist and owner of New Leaf Farm in Washington, had a vision to open a distillery. While searching for a location he met with Roxbury First Selectman Barbara Henry and she urged him to consider the former Roxbury train station, which was in urgent need of repair.  Elliott purchased the property in 2015, with a plan to repurpose the existing buildings, ensuring they kept their 19th century look, while reusing as many materials as possible, even the original floor boards. Using vintage photos, his commitment to the period is evident in the Station and the Distillery (once a cigar factory), which still boasts the original framing, winch, and nicotine stains on the floors!

Mine Hill Distillery won the 2017 Award of Merit from the Connecticut Trust for Historic Preservation. Elliott has a very clear vision. “We are dedicated to craftsmanship, authenticity and Yankee ingenuity which is reflected in every bottle. We take pride in sourcing our grains locally and using our own spring water to create spirits with a sense of place and Still Made in Connecticut.” Some of the corn and rye is sourced from Lion Rock Farm in Sharon, and the malt and wheat come from the Thrall Family Farm in Windsor, which has been in the family for 15 generations!

The fully restored property encompasses 4 buildings, a beautiful waterfall, riverfront lawns, a firepit designed by Elliott’s daughter and an outdoor bandstand.  The lumber shed are now a barrel house, and the 1872 Roxbury train station is a stunning event space suitable for weddings, private parties, and corporate off-site meetings. The Distillery combines state of the art technology with a historic and yet modern flair.  As Elliott told us during our tour, “it’s the wow factor” and we couldn’t agree more.  The second floor boasts couches, a fireplace, a flat screen tv tucked behind antique birch bark panels, and a devoted studio for local artists to create their work.

Elliott and his head distiller, Charisse Woods, began experimenting to find the perfect formula for vodka and gin. The vodka is distilled using local wheat in a single run to achieve a clean, crisp character. Located on the actual 41st parallel, they bottle their spirits at 41 percent, for a smooth vodka. The vodka is the base for their gin where they incorporate local ingredients such including eastern white pine, hawthorn berries, nutmeg (as in the state) and black walnut (the only ones in the world to do so). These spirits are available for sale at the distillery. Bourbon and rye are expected to be offered next year along with tasting cocktails as the state laws have changed because as Elliott says “who doesn’t like a cocktail?”

Mine Hill Distillery had a soft opening a few weeks ago and is open Saturdays and Sundays from 12-5pm.  Currently their products are only available at the distillery and at the Mayflower Inn.
(Update- As we went to print, we received the following update from Mine Hill Distillery “We are sold out! We were blown away by the hundreds of people who have visited Mine Hill over the last few weeks. The response and demand  exceeded our wildest expectations!
We are working hard to get our second batch ready for market and are finalizing our recipes for our bourbon and rye to put in our waterfall barrel house for future release. While we are temporarily closing our tasting room, we will still be open by appointment for tours and tastings.”)
